La asociación integra todos los sectores cárnicos (porcino, bovino, ovino - caprino) siendo la asociación que agrupa el mayor número de salas de despiece; también están asociados los líderes en exportación e importación de carnes. El sector porcino representa el 50% de la actividad total de sus asociados; en vacuno es por volumen la segunda asociación española y en ovino y caprino es la asociación más representativa.
La asociación defiende los intereses corporativos propios del sector y engloba la defensa e información de las actividades de sacrificio de animales, despiece, transformación, elaboración de carnes, el comercio de la carne y sus pequeños, facilitando a los asociados información general tanto autonómica como nacional, como comunitaria. Los objetivos principales de la asociación son obtener la modernización y competitividad del sector cárnico español y el progreso de sus asociados.
El funcionamiento interno de la asociación se basa en la atención directa al asociado, resolviendo sus dudas técnicas y legales y defendiendo sus temas ante las administraciones locales, autonómicas, nacionales y europeas. Para defender con más eficacia los intereses generales de nuestros asociados, tenemos 5 grupos permanentes de trabajo:
La asociación cuenta con 200 empresas asociadas: 108 producen y comercializan carne de vacuno, 116 carne de ovino, 91 carne de porcino y 61 de preparados de carne.
La asociación ha establecido coaliciones y relación con otras organizaciones y está en la Confederación Empresarial de la Carne (CECARNE), la Federación de Industrias de Alimentación (FIAB-CEOE), la Asociación Europea de las Carnes (UECBV), Centre de Liaison des Industries Transformatrices de Viandas del UE (CLITRAVI), la Asociación de Pequeñas y Medianas Empresas (PIMEC-ATA-UEATME).
