«Prosciutto de Capitán Pastene» was awarded recognition of Designation of Origin (DO) in the presence of Maximiliano Santa Cruz, National Director of the National Institute of Industrial Property (INAPI).
The request for recognition of the «Prosciutto de Capitán Pastene» DO is sustained primarily on the quality and uniqueness of this ham, historically associated with its geographical origin in the town of Capitán Pastene, and in the use of processing techniques inherited from the old Italian immigrants, supplemented by the local culture and the particular climatic conditions in this geographical location. It is a handmade product obtained exclusively from the hind legs of pigs, that incorporates wood smoking in its manufacturing process; maturation using just salt —no preservatives—, takes place in natural conditions, the cold air from the Nahuelbuta mountain range allowing for long periods of maturation without loss of moisture.
Capitán Pastene is a town in the Nahuelbuta mountain range, in the commune of Lumaco, approximately 140 kilometres northwest of Temuco, in the province of Malleco, Araucania Region, Chile.
This recognition is expected to contribute to the rescue of the local culture, increase the demand for these locally made products, and encourage the establishment of new tourist routes in the region.
