Throughout 2011 the consumption of meat in France was down 2.5% from the previous year. This decrease is due, among other factors, to the average increase in prices of 3.1%, an increase that still does has offset the cost of raw materials and industrial loads. Processed products follow the opposite trend although their market share grew by less than last year (in 2011 they accounted for 33.2% of all meat products sold in supermarkets, while in 2010 the figure was 32.6% and in 2009, 31.5%).
Regarding the fresh pork, it suffered a deadweight loss of -3.3% by volume at a price 3.3% higher, although lower than that of its nearest competitor, chicken meat (5.4).
