France: meat consumption is changing dramatically

After strong growth in the 1960s and 1970s, per capita meat consumption stabilized in the 1980s and has been declining since the early 1990s.

Meat consumption rose from 78 kg (carcass weight equivalent) in 1960 to 104 kg in 1980 (+ 26 kg), an increase of 1.4 kg per year on average. From 1980 to 1992, total meat consumption remained stable at around 105 kg per capita per year. Since the beginning of the 1990s, meat consumption has been declining (-17 kg per capita between 1992 and 2018). However, from 2014 on, it stabilized around 89 kg per capita.

Pork consumption increased until the early 1990s (26 kg per capita in 1960, 38 kg in 1993) and then decreased (33 kg in 2018). Two main types of products are offered: pork and charcuterie. The success of charcuterie products, including cooked ham, (regulated price until 1981), has to do with the convenience of preparing quick meals.
