USDA has issued a notice that instructs inspection program personnel (IPP) at establishments that produce raw pork products how to sample for Salmonella as part of the nationwide raw pork products explora tory sampling project (RPPESP) .

This notice provides instructions to IPP for:

1. Scheduling samples ;
2. Requesting sampling supplies ;
3. Sampling techniques ; and
4. Questions IPP are to answer in PHIS for each sample collected.

All establishments that produce raw pork products with an average daily production volume of greater than 1,000 lbs. in eligible product groups are eligible for sampling under this project. Sample assignment will be based on data in the Public Health Information System (PHIS) on finished product categories and product groups ; raw intact pork products ; and raw non-intact product groups as described in Tables 1 and 2 of this notice . The frequency of sample requests for raw pork products sampling will be assigned based on daily production volume, up to a maximum frequency of eight times per month.
