Figures referring to the installed capacity for the processing of livestock species, which include cattle, pigs, sheep, goats, horses, and poultry, refer to a total of 1198 slaughter centers, of which 75.4% correspond to municipal slaughterhouses (903), 14.5% to private slaughterhouses (174) and the remaining 10.1% to federally inspected (TIF) slaughterhouses (121).
Specifically for swine, the total installed capacity would allow up to 2,298,763 heads to be slaughtered in one month for an 8-hour shift. TIF slaughterhouses have the largest share with 52.1% of the maximum slaughter that could be obtained (1,196,746 head), followed by municipal slaughterhouses with 32.6% (749,254 head), and private slaughterhouses with 15.3% (352,763 head).
At present, private slaughterhouses for swine processing use 85.1% of their installed capacity, with an approximate monthly average of 300,095 head. TIF slaughterhouses have a utilization rate of 79.4%, with an average of 949,977 head, while municipal slaughterhouses operate at only 49.9% of their capacity, with an average of 373,653 head. In general, the monthly capacity utilization for swine processing is 71%.
