With the goal of offering a view of the current situation of the sector, the Spanish Serrano Ham Consortium (Consorcio del jamón Serrano) analyzes the data provided by the Spanish Tax Agency relative to the Spanish exportations of cured hams and shoulders during the first eight months of this year.
According to the data of the Agency, during this period a total of 16,580.72 tons of cured hams and shoulders have been exported: 1,224.96 tons more than during the same period in the previous year. This translates as an increase in the Spanish exportations of a 8.12% and an increase in its value of a 10.15%.
Regarding the destination of the exportations, Germany, France, Portugal, Belgium and Italy gather the 70.6%. These countries, along with Mexico, Holland, Norway, the United States and Russia involve the 81.3% of the exportations, although 100 countries are consumers of these products.
The main destination is Germany, that with 4,549.54 tons imported gathers the 27.4% of the Spanish exportations. France is close behind: it consumes the 20.7% of the product (4,472.25 tons). These two countries gather the 54.4% of the exportations, and Germany still shows a great growth potential, because in the last eight months it increased a 14.6% its importations, vs. a 0.5% in the case of France. Although Portugal holds the third position, there is a great difference in the importation of cured hams and shoulders, because this country gathers the 8.8% of the total Spanish exportations.
The European Union member countries add up the 78.6% of the exportations, because it is mainly focused on countries with a great tradition in the consumption of cured products. Nevertheless, recently, the exportation has diversified growingly, and different markets outside the EU are becoming more important: Mexico has become the 6th market for the exportation, with a 2.5% of the market. The USA have increased their importations a 10.4%, reaching the 8th place, and Australia has shown a great growth (39.3%) that places it in the 14th position in the market of importers of cured hams and shoulders. These data increase the exportations to third countries (outside the EU27) up to the 21.4%, showing their potential.
During these eight months, the branding by the Spanish Serrano Ham Consortium has reached 443,842 hams and shoulders.
