Effect of sex of the pig on the sensory characteristics of the Biceps femoris and Semimembranosus muscles in dry‐cured hams

Organoleptic ham criteria for immunocastrated males hams were equivalent to those found for surgically castrated males and gilts hams, demonstrating the efficacy of vaccination in these study conditions.

The objective of this study was to describe the main sensory characteristics of Biceps femoris (BF) and Semimembranosus (SM) muscles in dry‐cured hams of pure Duroc pigs of different sex. Sensory quality was evaluated by a sensory trained panel for dry hams. The jury assessed 5 visual descriptors, 6 taste/flavour descriptors and 4 texture descriptors of both muscles in dry‐cured hams from entire males (ME), surgically castrated males (CM), immunocastrated males (IM) and gilts (FE).

The results show that for BF, androstenone taste and hardness were superior in ME than CM, IM and FE hams. CM hams had a softer and more aged taste than EM hams, FE and IM being intermediate. There was a slightly higher metallic taste in IM compared with CM and FE hams, ME hams being intermediate. ME hams were less crumbly than hams from the other groups. SM had darker colour in ME than FE hams. In SM, differences between treatment groups for the taste descriptors sweetness and androstenone, and for the texture descriptors hardness and crumbliness were comparable to those found in BF. Organoleptic ham criteria for IM hams were equivalent to those found for CM and FE hams, demonstrating the efficacy of vaccination in these study conditions.
